If I had to describe carrots in one word? Underrated.
They’re one of those veggies you grow up seeing everywhere lunch boxes, stews, roasted trays but somehow, they still surprise you. They’re sweet without trying, earthy in all the right ways, and honestly? Pretty chic when you give them the spotlight.
When I was little, I used to sneak cold, peeled carrots from the fridge like they were candy. Me and my sister would pretend we were Bugs Bunny, chomping on carrots and quoting, “What’s up, doc?” like we were in our own cartoon. We thought we were hilarious. ( I love you Frensis)
Even now, on lazy evenings, if I’m not sure what to cook I roast carrots, add some herbs, and boom: cozy magic on a plate.

Why Carrots Deserve a Spot in Your Life
Carrots aren’t just pretty—they’re powerful little glow boosters.

Freezer: Blanch peeled carrots for 2–3 minutes, cool, and freeze in slices for soups and stews.
Cooking Options
Roasted: Slice or halve and roast at 220°C with olive oil, thyme, and a little honey for 25–30 mins.
Sautéed: Cook thin rounds in a pan with olive oil and garlic until just tender—around 8–10 mins.
Steamed: Quick and easy—steam for 5–7 minutes until vibrant and fork-tender.
Raw: Grated in salads, sliced in wraps, or dipped in hummus—can’t go wrong.
Souped Up: Add to broths, lentil soups, or blend into creamy carrot-ginger soup.

1. Honey-Roasted Carrots with Thyme
Toss with olive oil, honey, sea salt, and fresh thyme. Roast until caramelized. Serve with roast chicken or on their own with yogurt sauce.
